He is one of those good addresses that we would like to jealously keep for ourselves, these nuggets of the neighborhood that become our HQ so much we feel good there. This is the case of Parsleya tucked away restaurant in the rue Amelot in the 11th arrondissement of Paris. This address is only open in the evening and invites us to immerse ourselves in the world of Kumpi la chef to the atypical career that set up this restaurant with Richard, his companion. First in the medical world, then as a singer, the artist has now made her own stage in the kitchen.
In the kitchen, she adapts the à la carte recipes according to the inspirations of the moment and guarantees us a preparation to the minute for maximum freshness. His inspirations come from all over the world and his ambition encourages him to push back the limits of indulgence. When Kumpi discovers a specialty, she adds her own touch to surpass what she has tasted and makes healthy cooking rhyme with gustatory pleasure. And this is what will have aroused our crush!
By pushing the doors of Parsleywe must therefore expect a real neighborhood nugget jealously guarded by local residents. It must be said that in this Berlin-style setting, with a decor that mixes different worlds, you feel like staying with good friends. On sunny days, we also take advantage of its terrace surrounded by bamboo.

As a true alchemist of flavors, Kumpi transcribes his memories and experiences to a gastronomy at the crossroads between fusion and inventive cuisine. From specialties essential, we find its gyoza 100% homemade garnished with reishi mushrooms which bring more consistency and washed down with a tea juice infused with seaweed.
Big thumbs up for the watercress lasagna, spinach and Portobello mushroom au gratin either with Emmental or with a mixture of cheddar and mozzarella. Under the delicately crispy layer of cheese, you literally melt with pleasure thanks to a carefully studied balance of flavors that bring out the good taste of the vegetable plants. We also love the radicio salad served with tofu (or a fermented Greek Cyprus cheese for non-vegans) served with a parsley pesto or a slightly spicy beetroot pesto.
Until dessert, Kumpi manages to give us a tasty experience. To end this tasting, we find a poached pear in its own juice enhanced by a touch of cinnamon and lemon and which offers us a terribly gourmet syrupy texture, all accompanied by pomegranate and passion fruit for more crunch.
Another à la carte sweetness taking advantage of the superfoods : the cake with dates and salted butter caramel and plantain banana whose dough is prepared from oat bran. Much less heavy than what we might expect, this gluten-free dessert completes our desire to come back again and again to Persil.
